In senior living, dining goes far beyond a meal. It supports comfort, wellness, routine, and daily enjoyment. At The Rushwood Senior Living, we prioritize from-scratch cooking and source fresh ingredients weekly. Our culinary team prepares meals that are flavorful, nutritious, and tailored to resident needs. From house-made soups and sauces to freshly prepared entrées and sides, we focus on visible, high-quality preparation. As Culinary Director, I see how fresh sourcing and scratch cooking enhance health, satisfaction, and daily life.

In my kitchen, from-scratch cooking means maintaining control over nearly every step. Because we build recipes ourselves, we can add or omit ingredients as needed. This flexibility allows us to tailor dishes to resident preferences while meeting professional culinary standards.
Fresh ingredients also support resident health. When meals look vibrant and thoughtfully plated, residents are more likely to enjoy them. That visual appeal strengthens the overall dining experience and supports proper nutrition.
I adapt meals by combining culinary expertise with resident feedback. Successful senior living dining starts with listening. When residents share their preferences, I adjust recipes to balance comfort, nutrition, and practicality.
Comfort foods remain an important part of our menu. However, we balance them with fresh, wholesome options. Scratch cooking gives us greater control over both macro- and micronutrients. It also allows us to closely manage sodium and other dietary considerations.
One resident favorite made entirely from scratch is fried chicken. Below is the preparation process.
From-Scratch Fried Chicken Recipe
Ingredients and Preparation
Fresh chicken breast
Salt, pepper, garlic, and olive oil for marinade
Marinate the chicken with salt, pepper, garlic, and olive oil for at least one hour. Overnight marination produces the best flavor.
Breading Process
Seasoned flour
Lightly salted water
Plain flour
This three-step breading process prevents over-browning while creating a crisp, balanced coating.
Cooking Instructions
Fry at 325°F for approximately seven to 10 minutes, depending on fryer performance.
Ensure the chicken reaches an internal temperature of 165°F.
Serve hot for best quality and flavor.
Scratch cooking takes more time and attention. Still, the results make it worthwhile. Freshly prepared meals support wellness, enhance flavor, and create a dining experience that feels personal and comforting.
